Comfort Food Friday: Grammy’s Chocolate Cookies

These are the best cookies – I love them and so do my kids. When making a huge dinner doesn’t fit into your busy schedule, pop these yummy gems into a cute box (I used a chinese food take-out carton from a party supply store) tie with a bow, and Voila – a sweet treat for someone you love. There are so many ways to say you care and this is one of my favorites.

GRAMMY’S CHOCOLATE COOKIES
(Martha Stewart Cookie Contest Part 2 Winner)

  • 2 cups all purpose flour
  • 3/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 sticks plus 4 tablespoons softened butter
  • 2 cups sugar (plus extra for rolling the cookies)
  • 2 large eggs
  • 2 teaspoons pure vanilla extract

Sift together flour, cocoa, baking soda, and salt.  Set aside.

Cream butter, eggs, and sugar until light and fluffy. Add Vanilla. Add dry ingredients to butter mixture and blend well. Cover and chill for one hour.

Heat oven to 350 degrees. Roll mixture (between palms) into 1 inch balls. Roll each ball in the extra sugar. Place balls about 2 inches apart on a cookie sheet and bake until set, about 8 – 10 minutes.
